Harvest Mouse is a beautiful surprise of warm malty grains extracted of their sugar, coating it all in a glossy ochre veneer of vanilla. Harvest Mouse is comfort – a fragrance not unlike Chipmunk – as it celebrates autumnal flavours and smells. It brilliantly employs a CO2 extracted beer note, which slowly reveals impressions of caramel, banana esters, spicy clove, and dried rose petals accented with a honied chamomile note. Its savoury wheat-dominant charge evokes bakeries as much as it does breweries, and as Harvest Mouse develops Dubbel and Tripel ales turns to doughs, pastries, and brioche, a comforting meld of vanilla, sandalwood, hay, and beautiful ambery resins that invokes images of a central hearth that becomes the burning heart of a cottage, tinged with whispers of smoke.

The sun warms and kisses this woody material, and Harvest Mouse becomes the most precise of imaginative images: long rays of sunlight landing on and infusing bales of hay, wheat, and wood. Over time, its warmth extracts an incomparable aroma.
