Editor's Notes

A gourmand made by a master, which straddles the fine line between patisserie and perfume, edible and inedible. Saint Honoratus, the patron saint of bakers and pastry chefs, lends his name to a fabulous French gâteau made from choux profiteroles dipped in caramelised sugar, whipped cream lightened with meringue, and buttery shortcrust pastry. Nicolai’s olfactory rendition fills this sweet treat with spiced hazelnut cream and vanilla-speckled custard, placed on a stand made from sandalwood and amber, lending dryness and bottom weight, padded with the lightest musk.

Bright flourishes of bergamot, spicy-sweet orange blossom, warming tonka bean, and the sweet smoky heat of pepper remind us that this is a perfume, in the end: a serious soft amber that so happens to be really very delicious, too.
