An olfactive reconstruction of 17th century Viceregal Mexico: the mineral notes of terra cotta tile floors and stucco walls, the wooden beams and gilded altars give way to a heart of spiced cacao. In the background, the incense from the church mixes with the kitchen spices, creating an evocative Baroque concoction between heaven and earth. Notes include: Cocoa absolute, Mexican vanilla, cinnamon, and a smoked chili infusion.

November 1695, Mexico City. Deep inside the halls of the Royal Convent of Jesus Maria, a group of reverent nuns prepares a Baroque recipe of spiced Cocoa. The brew is infused with an assortment of chilies that tempt rapture, and the air is rich with the scent of exotic spices. An exquisite cacao note is key to Anima Dulcis, generously built from every side, it becomes the metamorphic material that reads as smoky, spicy, smooth, woody, and floral. It is for those who prefer eating chocolate at a minimum of 70% cacao, though Anima Dulcis is easily equivalent to the sublime bitterness of 90% or above. It is without milky sweet relief, riding this high and rewarding those who stay the course. It embraces the naturally savoury, partly medicinal tones of cacao: dustiness, like the coating of a chocolate truffle, is caught in a blend of sweet, and almost woody, popcorn-like toasted sesame seeds, fiery yet blunt cinnamon, sizzling cumin, rounding vanilla, and oregano - adding a beautiful agrestic overtone. After the allure of all these spices, a vegetal quality makes itself known - smoked chillis (including paprika) impart crunchy green and light burning heat balanced with sweetness, with enough char to suggest woodiness. Consider Anima Dulcis from another angle, and the sweet narcotic breath of jasmine saturates the scent. This finishes on mosses and woods. Bewildering and rewarding.
